I’ve been wanting to try this restaurant ever since hearing about their locations in Dubai and Miami, but reservations were always impossible to secure. So when planning our Vegas trip, I made sure to reserve well in advance — and it absolutely lived up to the hype.
The experience starts off strong with a fresh block of Parmesan cheese and cauliflower, followed by a large basket of assorted breads. That’s where I made my mistake — the bread was so good that I overindulged before the main course even arrived.
The portions here are enormous. I ordered the Veal Parmesan with a side of angel hair pasta, and it was easily the best veal parmesan I’ve ever had. My wife ordered the Alla Vodka pasta, which was equally outstanding. Unfortunately, we were so full that we didn’t have room for dessert.
The service and ambiance were exceptional. The dining room is very dimly lit, which makes taking photos a bit difficult, but it also creates a romantic and upscale atmosphere that’s perfect for date night.
I’ll definitely be back. My advice: pace yourself on the bread so you can fully enjoy the incredible entrees.

They give you complementary Parmesan cheese, bread and salami and some pickled veggies. Everything was delicious! Reminded abit of a charcuterie board.
We got 2 pastas. The vodka pasta. It was yummy. Probably my favorite vodka pasta I ever had. The other pasta we got is tortellini Al ragu. It was yummy!
For dessert they give you complementary rainbow cookies(they were okay).
The server was funny.

I booked reservations at Carbone at the Aria for our anniversary about a month in advance, knowing it would be extra busy during F1 weekend. There was no wait when we arrived, and we were seated right away in a really cute booth. Our server was incredibly friendly and had great recommendations.
We were on a bit of a time crunch because we wanted to make it to the race in time for the performances and driver parade, but the service was efficient without feeling rushed. The caesar salad was prepared tableside and was delicious, and our server suggested an off-menu option, the meatballs, which were also excellent.
The lemon drop martini was fantastic, and the spicy vodka rigatoni was absolutely phenomenal—I would come back again just for that dish alone.
Overall, we had a wonderful anniversary dinner. Great food, great service, and totally worth the visit—even on one of the busiest weekends in Vegas.

The food, service and atmosphere were great. Our ‘captain’ was really theatrical and attentive. The meal experience was really cool. The food was solid. Surprisingly I enjoyed the caesar salad the most. Order 3-4 plates for the table and share. It takes a little longer because you’re supposed to talk, eat and drink wine for a long time. Its classic red sauce Italian fare, served family style. Go in with that vibe in mind and you’ll love it.

The ambience was old-school fancy, but never came off as stuffy. Service was attentive, done with a sincere passion to bring every diner a great experience.

I tried one of their signature items, spicy rigatoni with vodka sauce. I thoroughly enjoyed this dish, which was perfectly al dente and layered with rich, vibrant flavors.

Shared the Torta di Nocciole with my wife and we both loved it. This dessert is emblematic of the Carbone experience: big, bold, maybe a little excessive, and an absolute must-try on your next Vegas trip.
