A short food history of Ashdod
Modern Ashdod was founded in 1956 near the site of an ancient Philistine city, and its deep-water port, opened in the 1960s, made it one of Israel's main gateways for trade.
The city grew with immigrants from Morocco and Tunisia, then from Georgia, Ethiopia and the former Soviet Union. Their home cooking fills its markets and restaurants: spicy fish, khachapuri, injera, and kosher grills by the sea.
