Culinary history
A short food history of Philadelphia
Philadelphia was the young United States' first great city and its first capital. Its farm country, the Pennsylvania Dutch region, supplied pretzels, scrapple and baked goods that still define its markets.
Italian immigrants built the South Philly sandwich shops, and Reading Terminal Market, opened in 1893, still gathers the whole city under one roof.
