Stubborn Seed is primarily a dinner destination, offering tasting menus and à la carte options in the evening. Sitting at the bar is recommended for a more relaxed Michelin-star experience.
We sat at the bar with Gaby and had a fantastic à la carte meal. You honestly can’t go wrong with anything on the menu. We loved the papas, seasonal agnolotti, and the chicken the most. But now that I think about it the bread was out of this world! So like I said, can’t go wrong.
Highly recommend you sit at the bar for one of the most chill Michelin star experiences ever. And Gaby will take care of you!
Not the one-Michelin-star experience I was hoping for.
We did the nine-course tasting menu at $200 per person. Stripped of the star and the expectations that come with it, this would be another alright overpriced meal — but at this level, the gap between promise and delivery was hard to ignore.
The Atmosphere (3/5):
The room leans dark and French bistro, don't get me wrong, the main dining room looked great, but it is a strange fit for a kitchen that markets itself on fresh, farm-driven ingredients, but I don't deduct any point for that. The main issue is one of the bathroom's enormous untinted window, when you first walk in from the dimmed dining room, you get a jarring blast of light blinding and dazing you, if you visit after 8PM, this would be a non-issue, but anytime there is sun, that bathroom is like a flash bang waiting to claim its next victim.
The Food (2/5):
The food was inconsistent. The Charred Poblano Agnolotti was genuinely excellent, easily the highlight of the night. The yellowtail and the foie gras were solid too. But the duck arrived aggressively over-salted, and another dish included garlic scapes so underripe they were essentially inedible — at nine courses and this price, those aren't small misses.
The Service (2/5):
Service was polite but surface-level. When I raised issues with the food, the response was acknowledgment rather than any real interest in understanding what was wrong and how to improve for future — not what you'd expect from a kitchen operating at this tier. We also made a special request at the start of the meal that was simply forgotten. By then I'd stopped hoping the night would turn around and just wanted it to be over — not a thought you should be having at dinner at this price point.
For context, I've eaten at The Surf Club and Le Jardinier during the same trip, and both left me eager to come back and see what the chef would do next. I didn't leave here with that feeling.

From the second we walked in the experience was tremendous. Pedro is probably the best person I’ve ever had the pleasure of dealing with. Smiles the whole way from staff. Very proud and knowledgeable of their craft. My girlfriend is somewhat of a picky eater and usually finds something to criticize but she loved every single dish they brought out. The chef has curated an amazing and unique menu that will have you questioning your eating habits. Props to the whole team I’m coming back to Miami more often just to experience this again.

Fabulous dinner from start to finish, withe raviolo being spectacular! Service was exemplary, & we were thrilled with the speed of it (tasting menus are usually a Doom March, but our 6 course was served in just over an hour). Excellent wines too! The noise level was a bit high, but added to the vibe.
Highly recommend!
