You don’t really see me ordering regular croissants or baguette at bakeries because they’re easily a letdown - the basics are the hardest, but I did order all the classics at Guillotine and they didn’t disappoint! I really like the counter seatings around the open kitchen, so I can watch them making breads while I eat.

Absolutely love Guillotine Bakery! Everything I’ve tried has been fresh and delicious: pastries are flaky, perfectly balanced, and clearly made with care. The bread is exceptional there!!!
Staff are friendly and the vibe is cozy. Highly recommend if you’re in Chicago.

I honestly can do nothing for any man or woman who leaves Guillotine Bakery and doesn't leave a five star review this place has every base covered and does nothing without the highest degree of excellence! My mind was blown and taste buds were elated!!

Run there! The closest you can get to French quality! They use the best flour and butter. Great atmosphere and sitting options. Had a matcha latte with homemade brown sugar syrup, great quality.
