Restaurant Guy Savoy (Caesars Palace, Las Vegas, USA)

While I was looking forward to this experience I'd say it did hit the mark in a few places and missed in others. I'm glad I picked the à la carte option of 2 mains and 2 desserts. The Branzino main was a knock out of the park - like the fish was masterfully prepared, crisp skin and tender meat. I've never had fish skin so beautifully crisp like OMG. The mushrooms complimenting it were just as spectacular. The second main was the squab - little if I knew it's nothing but a young pigeon, I would've skipped it entirely as I'm not a fan; but the dish was good nevertheless. The tomato and fig ketchup was amazing and the figs were beautifully seared in the sauce. The desserts...here is where both fell flat in their own places. The first was coconut six ways. Needless to say it was the most unique dessert I've ever tasted, what lacked was the sweetness. Oh dear that alone would've made it star of the night; they skimped on sugar, like seriously??? The next was the pear and I've had a better version in Paris. This one wasn't bad, like a bite containing all the elements of the dish was great, but individually there was nothing much to savour. The dessert trolley was ok - the chocolate was amazing but the cherry tart was just terrible (putting it bluntly as it's a Michelin rated restaurant), very very soggy and tasteless. I'll still rate it a 4 given the other pluses mentioned above. I'm not a stickler for ambience, but where I was seated it was really dull and they could've upped the decor like at least added a flower vase in the middle of the room.
