Some restaurants impress you with creativity. Others impress you with luxury. Etxebarri does neither.
Instead, it reminds you of how extraordinary great ingredients can be when treated with absolute precision.
What surprised me most was that such depth of flavor could be achieved with what appears to be such a simple approach. Saying “simple is best” does not do this restaurant justice. Every ingredient seemed to reach its highest potential through the careful use of fire.
I found myself completely focused on the food. In fact, I became so absorbed in the experience that I forgot to take photos of several dishes — something I rarely do.
Years later, I can still clearly remember many of the flavors I experienced here.
Not because they were flashy or complicated, but because they were unforgettable.

I still think of that sun-kissed terrace where we enjoyed some of the world's finest food paired with exceptional wines. On that perfect spring Sunday, we managed the impossible—the culinary equivalent of catching lightning in a bottle: a walk-in at Asador Etxebarri and what felt like the best table in the house.
Every dish was sublime, from the sea urchin cooked in its own water, to the succulent hake kokotxas, to the exceptional txuleta. Even the desserts—the chocolate soufflé and the legendary milk ice cream, as well as a delicate off-menu pastry for our anniversary—were kissed by fire under the incomparable expertise of Bittor himself. The ingredients were simple, but the way he works the hearth allows every flavor to truly shine.
Touring many of the Basque Country's finest tables afterward only deepened our appreciation for Bittor's extraordinary genius. He still personally helms the kitchen, defying the celebrity trend of doing otherwise. As one of his staff said, "If Chef is not cooking, the restaurant closes." Dare I say this explains why it is so difficult to get reservations, especially given the limited number of seats each day? It was indeed a privilege to meet Bittor himself and thank him.
The wine pairings from the celebrated yet incredibly humble Mohamed Benabdallah were superb, from the local Txakoli to the Chablis. We were truly spoiled by the warmth and hospitality of the entire team. What stood out just as much was the complete absence of pretence, much like the food served.
My experience at Asador Etxebarri has redefined what fine dining means to me. The very best food does not need embellishments; it speaks for itself.

Beautiful location and Im sure the tasting menu was great years ago when it was developed. The food was ok but was basically massed served. At many points they tried to take plates with food still on them. I have been to many top 10 restaurants and the service is a big part of the experience. The food came out in bulk and was removed at the same. One day it's buratta, the next day mozzarella 😉. Btw don't even ask about the flat souffle
It was an interesting experience but for the cost of even getting there is support more local restaurants

A mythic experience in a beyond beautiful setting - driving to the restaurant is an experience on its own. The food itself prides itself on unbelievable product and the shrimps, peas, and txuleta will probably ruin all the future ones for you.

The tasting menu includes around 14 courses, starting with the simplest items like freshly churned butter and grilled bread, moving toward Palamós prawns, grilled sea bass, and aged steak cooked over a slow, smoky flame.
The flavor signature is unmistakable: a refined, smoky depth that enhances rather than overpowers the ingredient. Each dish feels like a quiet celebration of time, patience, and control.
