We checked out this restaurant based on recommendations from our friends, and it definitely lived up to the hype!
The vibe and atmosphere were incredible—quiet, relaxing, and perfect for a date night. The tables were spacious, and there was plenty of room between them, making the experience feel comfortable and intimate.
We chose the tasting menu, and every course was excellent. The fish was outstanding, and the duck was our favorite—the crispy skin and perfectly cooked, tender meat were absolutely delicious.
A special shoutout to Chaz, Chuck and Zach for providing exceptional service. They were professional, attentive, and always greeted us with a friendly smile, making the evening even more enjoyable.
We would absolutely recommend this restaurant to anyone looking for a memorable dining experience.

This review comes from early April during one of our many staycation adventures at Crockford's at Resorts World Las Vegas. We kicked off the trip with dinner at Stubborn Seed. We've been fortunate enough to dine here four times since they opened, and somehow it just keeps getting better. On our previous visit, we even had the opportunity to spend some time chatting with Michelin-starred Chef Jeremy Ford, who is one of the most humble, down-to-earth people you'll ever meet. He is a magician when it comes to conjuring up spectacular dishes.
We started the evening with champagne before I settled into one of my all-time favorite Scotches, Lagavulin 16. Candice chose the tasting menu while I decided to order à la carte so we could experience a little bit of everything.
First dish up was the Cacio e Pepe Cheesy Puffs, which were unbelievably light, airy, cheesy, and absolutely addictive. The butter pickles added just the right amount of salty tang to balance all that rich buttery goodness.
Next came the Kalamata Olive Ciabatta with whipped feta, Kalamata dust, and pickled baby radishes. Simple ingredients elevated into something truly memorable.
One of my personal favorites followed: the Sake & Citrus Cured Japanese Yellowtail. The combination of textures, acidity, and freshness makes this one of the most beautiful and well-balanced dishes on the menu.
I couldn't pass up the Foie Gras & Truffle Tarts. If you know me, you know foie gras is one of my favorite things to eat, and these were every bit as rich and decadent as I hoped.
The Harissa Lamb Faggatelli delivered incredible flavor with its combination of tangy ginger, sweet peppers, and perfectly cooked lamb.
Then came the Fragrant Spiced Barramundi. While Candice isn't the biggest fan of this dish since she dislikes curry, I absolutely love it. It has just enough spice to keep you coming back for another bite without overpowering the delicate fish.
The Smoked Beef Rib arrived next, and honestly...this is a dish you simply cannot skip. Every single bite is packed with smoky, tender perfection. It's one of those dishes that sticks with you long after dinner is over.
Then came the Westholme Australian Wagyu Striploin. Perfectly cooked with incredible marbling and textures that remind you why premium Wagyu is so special. Absolutely flawless.
To finish the tasting menu, Candice enjoyed the Citrus Pavlova featuring olive oil cake, Yuzu pastry cream, Cara Cara oranges, and caramelized pistachios. The balance between savory, sweet, citrus, and crunch makes it one of our favorite desserts anywhere in Las Vegas.
Of course, Stubborn Seed is known for all the little surprises throughout the meal. There were palate cleansers, petits fours, and a gorgeous festive donut that was almost too pretty to eat. I may have accidentally forgotten to take a picture of their incredible peanut butter candy bar, but trust me—it was every bit as amazing as it sounds.
Now for an insider tip...
If you're coming to Stubborn Seed just for dinner, you don't have to park in the Resorts World self-parking garage. During one of our earlier visits, Josh—one of the managers—shared that guests dining at the restaurant can valet at the Conrad entrance and simply walk directly into the back entrance of Stubborn Seed. It's incredibly convenient and has become our preferred way to visit when we're not staying at Crockfords.
The service here has been exceptional every single time we've visited. Between the consistently outstanding hospitality, the way they treat locals, and some of the finest food you'll find anywhere in Las Vegas, Stubborn Seed continues to earn its place among our favorite restaurants.

Yes...it's that good.
This isn't one of those places where I say, "We'll definitely be back."
We already come back every couple of months...and I have no doubt we'll be sitting at one of these tables again very soon.

I thoroughly enjoyed my experience at Stubborn Seed Las Vegas. The food was outstanding, and every dish felt thoughtfully crafted and full of flavor. I ordered the Fragrant Spice Barramundi and the Truffle Bravas, and both were absolutely fantastic.
What made the experience even better was being able to walk in without a reservation. In many major cities, especially New York, restaurants of this caliber often require reservations weeks in advance, so that was a pleasant surprise. The service and atmosphere made for a memorable evening, and next time I’ll definitely be trying the tasting menu. Highly recommend whether you’re staying at the Conrad, elsewhere at Resorts World, or even if it’s worth a drive across town.

An outstanding dining experience at Stubborn Seed. The tasting menu was creative, beautifully presented, and expertly executed from start to finish. My favorite dish was the fish course—it was perfectly cooked, flavorful, and easily one of the best seafood dishes I've had. The dessert at the end was the perfect finale: balanced, elegant, and memorable without being overly sweet.
The service was attentive and knowledgeable, and every course felt thoughtfully curated. If you're looking for a special dining experience, the tasting menu at Stubborn Seed is absolutely worth it. I can't wait to return
