The sommelier speaks perfect English and suggested amazing pairings. Overall, this was a wonderful culinary experience set in a cozy setting. We choose the menu Vibration which was a set price of 158 euros. Rather reasonable comparing to other places. Highly recommend you make a reservation. Enjoy!
With the plethora of fine dining options in Paris it can be difficult to pick a place and also be pleased with your choice.
I am so glad I chose Substance!
We had the lunch menu and I was thoroughly impressed.
A standout course was a dish that was a lean cut of tuna which was paired with a slither of guanciale which lended its fat to make the dish incredibly delicious - such a smart idea!
Another standout was an ice cream with a filling which I forget with a gorgeous pink meringue delicates placed on top.
Both courses evoked such deep emotion for me as I could tell these dishes was made with a lot of passion and love for gastronomy by the dynamic duo Flavio and Aurora (who we had the luck of being our server instead did being on the tools!).
Many Michelin starred establishments I go to are one and done but I will definitely be back.

I had the most amazing three course lunch here! The experience was SO fantastic, I cannot wait to return so I can order a meal w more courses and have a longer experience at Substance! The 🍷 was amazing; the service spectacular. From the amuse through dessert, this is a true culinary experience. The trout... I'm still talking about it days later. A new favorite Paris spot!

As a Michelin star restaurant, your bare minimum is to have food that taste good.
This restaurant met that bare minimum.
The ambience was really lacking. I just could not identify many proofs of passion towards the concept except for maybe some of the table setting and glassware, which were pretty. The music was so lazy it was like top Pop hits. The lighting was strange (not a compliment) and non existent in terms of finesse. Often times I felt the utensils were not proper for its particular dish pairing which was offputting.
It felt so disconnected, it was really a little bit sad. I'm not nitpicky honestly, its no way to be and its not real, i know that nothing is perfect even when it is perfect
this just all felt very dull and the devil is in the details which are impossible to ignore.
So much about this restaurant was pretty offputting, I felt it really lacked character, and that was very evident in the food, not only the ambiance.
It was good tasting. I expect so much more from a place with this type of regard.

This was the best meal we had in Paris. While it is the epitome of Dine Dining, it was not ostentatious and the atmosphere was hip. Every dish was a hit and they accommodated our dietary requirements without paring back in the slightest. The wine was sensational too. We had a gorgeous table in a bay window. It is a pricey night out but very special indeed.
