Ichiran Ramen in Shinjuku is renowned for its singular focus on perfecting Tonkotsu Ramen. It offers a unique dining experience with individual 'flavor concentration booths' designed for solitary enjoyment and minimal interaction, allowing diners to focus entirely on their meal. The ordering process is highly customizable, allowing patrons to specify broth richness, garlic level, spice, and noodle firmness via a sheet and vending machine system.
Customer Perception
Customers consistently praise Ichiran for its delicious, rich, and creamy Tonkotsu broth, perfectly cooked thin noodles, and tender chashu pork. The customizable ordering system is a major highlight, allowing diners to tailor their ramen to their exact preferences. While there are often long lines, reviews note that the wait usually moves quickly. The unique individual dining booths are appreciated by many for providing a focused and private eating experience, though some acknowledge it's a very touristy spot.
Ichiran is dedicated solely to the study and perfection of Tonkotsu Ramen. The restaurant utilizes a unique ordering system involving a vending machine for initial selections and a customization sheet at the booth. Diners are seated in individual cubicles, often referred to as 'flavor concentration booths,' which feature a small curtain that lifts to serve the ramen, minimizing interaction with staff.
Given the frequent mention of long lines and wait times (20-50 minutes), it's advisable to visit during off-peak hours if possible, though specific 'best times' are not provided. Expect a wait, especially during standard meal times.

A Must-Try Ramen Experience in Shinjuku! 🍜
ICHIRAN is one of the most famous ramen restaurants in Shinjuku. A wait of around 20 minutes seems normal, but the line moved quickly, and we were seated sooner than expected.
The individual dining booths were unique and allowed us to focus completely on the ramen. The ordering system was convenient, with options to customize the richness of the broth, garlic, spice level, and noodle firmness.
I chose the recommended settings. The tonkotsu broth was rich and creamy without being too heavy, and the thin noodles, tender pork, green onions, and spicy red sauce worked perfectly together.
The ramen was so delicious that I almost finished the broth! 😋 If you are visiting Shinjuku, I highly recommend experiencing ICHIRAN. 🍜🇯🇵
Been planning to have it in Taiwan and Hong Kong, but we ended up lacking time — only to finally be able to try it in Japan!
Not a big fan of ramen, but this is definitely an exception. Love the drama of it all.
You start by getting a QR code, then they email you once it’s time to line up. It gives you a chance to roam around instead of waiting in line for hours. Once you receive the email, you head back and line up to order through their vending machine. After ordering, you’re ushered into the waiting area where you wait for your cubicle. Thankfully, it didn’t take too long to get seated.
I love eating in solitude. As an introvert, this setup is a dream. You can really focus on the taste of the food.
Ordered the Classic Tonkotsu, a half-boiled tamago, and their original tea. I love how customizable everything is — broth thickness, noodle firmness, and spice level. The broth was so good. Next time, I’m definitely ordering extra sliced pork because it was incredibly tender and the smokiness was just right.
This has got to be one of the highlights of my Japan trip. Will definitely go back when I get the chance!
Ichiran is one of those ramen spots that has worldwide popularity, with many tourists coming here as a pilgrimage or their place to try ramen.
There is usually a really long line, so expect to wait. Once you’re seated, everything is designed for privacy and focus, which actually makes the ramen feel even more intentional. You don't see your server, instead focused on minimal interaction.
The ordering system is simple, and the customization lets you really dial in your bowl exactly how you want it. The ramen itself is great, and for the price, is perfect. Rich, flavorful broth, perfectly cooked noodles, and that soft-boiled egg was a must. It is definitely a touristy spot though, so waiting in line may not be for everyone.
The atmosphere is quiet by design, so it feels like you’re just sitting with your food and nothing else, which is kind of the point. It’s not the fastest experience if there’s a line, but once you’re inside everything moves quickly.
Our comfort food to go whenever we need a quick fix. Went for the signature ramen dish & top up with egg. At Ichiran, diners need to peel the egg. Its easy enough to do so. Overall its a fast food concept and ramen is tasty.
Ramen was great and you get seated individually. Even when I went with kids, we were able to sit next to each other and they enjoyed the experience. The atmosphere was supposed to be quiet too so folks can enjoy their ramen peacefully. There was a 30-50 minute wait time, but just because we're already there and we wanted to see what the buzz was about, we waited. If you enjoy ramen, I'd say it was worth the queue. One of the best ramen I've tried. Kids approved.
Probably not recommended for kids who need assistance when eating.
