Had a great time at this cheese shop! Tried some yummy cheeses & the staff were so friendly! I got the chicken grilled cheese and the tomatoes were very fresh and the spinach as well inside! I wish there was a bit more cheesy flavor and the chicken was a little bit more crispy but other than that, it was great! I really appreciated the crunchiness of the bread. The salmon mac & cheese was very dill heavy so I’m not sure if Ify would get it again and I have more describe it as pasta with cheese sauce and salmon, but not necessarily a traditional mac & cheese.
No food fascinates us quite like cheese, whether it’s arranged on a beautiful platter, grated over pasta, or melted between two slices of bread.
Cheese is a dairy product made by fermenting milk and draining off the excess liquid. Depending on the style, cheese can range in flavor from mild and sweet to savory and nutty to funky and pungent. It can be soft and spreadable, creamy and smooth, or firm and crumbly. It’s been enjoyed in cultures around the world for thousands of years, and today, cheesemaking takes place on every continent except Antarctica.
In Seattle's Pike Place Market, visitors to Beecher's Handmade Cheese have a cheese lover's dream come true. They watched a glass-walled cheesemaking kitchen firsthand on the crafting of their signature favorite, Flagship cheese, as well as many of the other award-winning cheeses when my partner, his family, and I visited in July.
To our surprise, there was no wait when we arrived, which was unexpected given how popular this place is. Bite sizes of Flagship and Marco Polo cheese were available for samplings. From the very first bite, we were hooked by its rich, creamy texture and perfectly balanced flavors. While there is no dine-in option, it’s strictly a pickup spot.
Surrounded by the lively buzz of locals and tourists, visiting this establishment feels like a quintessential Seattle moment.

Great spot in Pike Place market, serving all kinds of cheese goodness that’s hand made on site. The grilled cheese was incredible, they make a decent Beechers cheese here.
Worth considering a visit early when they open to avoid the long lines, but worth stopping in to savour the food as a snack while exploring Pike Place market.

A Rich, Creamy Cheese Experience at Beecher’s
There are so many great things to eat at Pike Place Market, it’s honestly hard to choose—but this is one spot you’ll want to add to your list. If you’re on the fence, it’s easily worth prioritizing.
Beecher’s cheese is rich and creamy, with a deep, milky flavor and a clean, high-quality finish that really stands out.
If you get the chance to visit, don’t miss the grilled cheese sandwich or the mac & cheese. Both are simple, but done exceptionally well—and a great way to experience just how good their cheese really is.
It might just raise your standards for cheese altogether.

Beecher's is a worthwhile stop at Pike Place Market. I ordered the mac and cheese, which is probably their most famous item, and it lived up to expectations.
The pasta was cooked well, and the cheese sauce was rich, creamy, and full of flavor without feeling overly heavy. What stood out was the quality of the cheese itself—it had a more robust, nutty flavor than the typical mac and cheese you find elsewhere, which made the dish feel a little more special.
One of the fun parts of the experience was being able to see the cheesemaking operation through the windows while waiting. It gives the place a unique atmosphere and reinforces the focus on quality ingredients. If you're visiting Pike Place Market, it's an easy stop to recommend.
