Stopped by Bark Barbecue at Time Out Market in DUMBO for an episode of Jaguar’s Guide TV, and this one was a little mixed for me.
The setup is a food hall, so it’s not a traditional sit-down restaurant experience. You order at the counter, grab your food, and find seating in the communal space. Service was fine, nothing bad, but nothing especially memorable either.
Food-wise, the pork ribs were the clear standout. Easily the best thing on the tray and honestly out of this world. The chicharrón was also really good and worth trying.
The letdown was the brisket. It came out dry and the flavor didn’t hit the way I expected, especially from a barbecue spot known for smoked meats. The mac and cheese was okay, but not something I’d go out of my way for.
At $71.84 total, the value took a hit for me. The ribs were absolutely worth trying, but at that price point, more of the tray needed to deliver at a higher level.
My breakdown:
Food & Drinks: 8.6/10
Service: 7.5/10
Value: 7/10
Jaguar’s Hospitality Score: 7.7/10 🐾
Overall, I’d say consider it, mainly for the ribs and chicharrón. The full episode is on Jaguar’s Guide TV on YouTube if you want to see the complete breakdown.
Food was absolutely amazing. I'm not one for taking food home but the serving was enough you would want to have some for another time. My first time here and I think I took it pretty easy. I had the carnitas , the brisket , Mac and cheese and rice in peas. A little bit of a wait but location and beautiful day with beautiful views it was soooooo worth it!
I’ve been to quite a few BBQ spots and bark is my favorite in Brooklyn, I know everyone loves brisket - BUT I’d go Chicharron, Sausage, plantains and Slaw. 😮💨 the chicken is a bit dry but it’s a great option if you’re calorie conscious
I went to this location several weeks ago. Instantly appreciated the food. The mac n cheese, pork ribs and smoked fried chicken definitely a stand out for sure. Brisket was moist n tender. The caf style eating was a bit meh especially being that its first come first serve with serval other eateries. Overall its a must try.
One of the top BBQ spots in the city, located on the 5th floor rooftop of Times out market. Friday night with DJ spinning classics and lively atmosphere, most up here are either at the bar or waiting in line for Bark. The Dominican roots show with items like chicharrón, carnitas & tres golpes.
Alas got here too late this day, was sold out of brisket, beef rib and rib tips. The pork ribs and tres golpes sandwich hit the spot, Arepa Dominicana very rich and sweet, took home half for later.
Main downside of the place is it's always packed, often 1-2 person ordering for half a dozen seated and only the owner taking/portioning orders leading to crazy wait times. This time only 45 min in line, but have waited 75+ on weekend afternoons.
