Poğaça, also known as pogača, is an Ottoman pastry and type of bread found across Southeast and Central Europe, including the Balkans, Levant, Turkey, Hungary, and Slovakia. Traditionally baked in fireplace ashes, it is now also made in modern ovens and can be either leavened or unleavened. It is generally prepared with wheat flour, sometimes with barley or rye, and can be stuffed with fillings such as potatoes, ground beef, olive, or cheese. Grains and herbs like sesame, black nigella seed, or dried dill may be added to the dough or sprinkled on top.
