Dirty rice is a traditional Louisiana Creole dish, fundamentally made from white rice. It acquires its characteristic "dirty" color from being cooked with small pieces of pork, beef, or chicken, alongside green bell pepper, celery, and onion. The dish is seasoned with cayenne and black pepper, and commonly garnished with parsley and chopped green onions. While most prevalent in the Creole regions of southern Louisiana, it is also found in other areas of the American South and may be known by alternate names such as "chicken and rice," "Cajun rice," or "rice dressing."
