Sundubu-jjigae is a Korean jjigae, or stew, characterized by its use of freshly curdled, extra soft tofu (sundubu) that has not been strained or pressed. It is prepared with this soft tofu, vegetables, and often includes ingredients like mushrooms, onion, optional seafood or meat, and gochujang or gochugaru.
