We went to Prof's for granita, and were disappointed by the service and, to some extent, by the granita itself, which was good but not exceptional. Machine-whipped cream is unheard of in a place that strives for excellence. But the real downside, unfortunately, was the service. The place was packed, and with only two waiters, it's normal to have a wait, of course. What I really couldn't stomach was the fact that tables arriving later were served earlier and faster, while we were still waiting for water. I'm sorry, but there's a lot of room for improvement.
My experience, unfortunately, didn't live up to expectations, especially considering the restaurant's reputation.
What struck me most was the incredibly long wait, even though the place didn't seem to be in a situation that warranted it. Added to this was the rude and unorganized staff, which made the wait even more annoying.
As for the granitas, which are often advertised and touted as among the best, I personally didn't find them that exceptional. They weren't inedible, but honestly, I expected much more given the place's reputation and the hype.
Overall, I think there are several areas for improvement, especially organization, wait times, and customer service. It's a shame, because the place definitely has the potential to offer a better experience.

We went for the famous granita, terrible service. 1 hour and 40 minutes to receive 4 granitas... And what do they bring me? A kind of mojito? It was supposed to be a bergamot granita with mint, but instead I find a glass of flavored water... NEVER AGAIN
Excellent hospitality and a strategic location. My only complaint about the rooms: the bathroom is too hot, and I would add a shelf or stool to put my clothes on. Otherwise, I was very satisfied.
Zero professionalism and a completely unacceptable tone
Terrible experience. I just wanted to know if it was possible to order two granitas to go. A simple request would have been enough, but instead the owner responded rudely, complaining about his delays and people with children waiting over an hour.
I wonder what fault a customer has for making a polite request. A minimum of courtesy and professionalism would be enough to say that takeout wasn't possible at the moment. Politeness towards the customer comes first, especially when the organizational problems are yours. Highly discouraged.
