I know there have been some mixed reviews about Fujimoto-san’s sushi restaurant, but my experience was absolutely fantastic. Fujimoto-san, the owner and head sushi chef, is a true master of Edomae sushi, the traditional Tokyo style. His years of dedication are evident in every detail, from his precise knife skills to the way he prepares each piece of Nigiri.
The sushi was outstanding—warm, slightly tangy rice paired with the most tender, flavorful fish, and just the right touch of salt to enhance the flavors. While I’m no sushi expert, I could still really appreciate the balance of flavors, the textures, and the presentation. It’s amazing to think that this style of sushi has been crafted the same way for over 200 years.
Despite the mixed reviews, my experience here was top-notch. The care and tradition Fujimoto-san pours into his work are crystal clear, and you can truly feel his passion for the craft. If you’re in Hong Kong and are looking for an authentic sushi experience, I highly recommend visiting this hidden gem—it’s well worth it.
