A strip steak entree.
The strip steak is a type of beef steak cut from the short loin of cattle. It is derived from the longissimus muscle, which does not do much work, resulting in a particularly tender cut of meat. This sizable muscle allows for larger portions compared to other cuts like the tenderloin.
