Fine-dining restaurant with a Michelin star since 2020. Chef Carlos Maldonado’s cuisine is creative but locally rooted. Upon arrival, you choose between two menus: short (“Básico”, €105) or long (“Raíces”, €150). We had the long menu, which includes 25 items and took about 2.5 hours. There is an enveloping concept and many personal touches. The food is served on beautiful ceramics made in Talavera and surroundings. Every single course was excellent, especially the Mexican part. The level of detail and ingenuity is remarkable for a one-star restaurant. Definitely worth a trip to Talavera (an unexpectedly pleasant city, by the way).
It is incredible to see how much the chef has achieved in so little time, not only for the amazing tasting menu and his well-deserved Michelin star, but also with his community and teaching projects. We enjoyed the experience, including the very interesting wine pairing.
A fantastic gastronomic experience in Talavera de la Reina, with attentive service and dishes full of flavour. Chef Carlos Maldonado does a great job in the kitchen where he is fully involved. Beautiful presentations that prominently showcase the ceramic for which the city is famous. Dishes are small but many, so you will not leave hungry.
Perhaps a small improvement point is the wine choices and sumiller service.
Good price-quality. It’s a good experience for a good quality young chef experience. I took the “9 pases” and the starters were not that good but the overall experience at a good price was nice. Great deco and architecture details but chairs should be improved. I must say that the cutlery was amazing. Keep it up guys!
