Sabich is a sandwich, often served in pita or laffa bread, that is typically stuffed with fried eggplants, hard-boiled eggs, chopped salad, parsley, amba, and tahini sauce. It is a staple of Israeli cuisine, based on a traditional Iraqi Jewish breakfast. The dish was created in Israel in the early 1960s by Sabich Tzvi Halabi, an Iraqi Jewish immigrant, who combined these ingredients, traditionally served separately, into a single pita.
